HACCP (Hazard Analysis and Critical Control Points) is a compliance requirement for the food and drink industry. The implementation will vary at different parts of the supply chain from manufacture, to distributor, to retailer but documentation is a common requirement.
There will be documents that define the policies, the processes and standard operating procedures (SOP), as well as documents produced to record / track actions taken during daily operations (e.g. Temperature readings, cleaning schedule checks). Control over the versions of documents and an audit trail of when they were created / amended is a core part of the handling of the documents. Document registers are typically kept to define the existence of the various documents which can be combination of Microsoft Word documents and Excel Spreadsheets.
